Succulent satay chicken
This was huge and so filling, I used Amoy peanut satay sauce, 200g chicken,
pack of straight to wok fine noodles, diced carrots, spring onions, cherry tomatoes and asparagus.
I put the asparagus to boil (I know I should have steamed it). I stir fried the chicken and carrots, after a few minutes I threw in onions and tomatoes, then after another couple of minutes when chicken looked cooked I stirred in the sauce and noodles. Finally drained off the asparagus and added that two. It was huge, enough for two people probably but I was greedy! Plus I hadn't had lunch and so ths was double dinnner ;-)
