Don’t act like it’s you against the world, it’s really just
you against yourself.
Well today I shall mostly be doing absolutely nothing! Yep, after last Friday being moms birthday
and the entire weekend being busy, then a full on week at work, today I’m
chilling and taking it easy. Shame the
forecast isn’t a good one but that’s okay I can chill indoors.
I finally defrosted the salmon then didn’t fancy it last
night, so I’ll have it for my dinner today.
I did make a tasty orzo salad, I added some mint sauce as the dressing
and it was delicious. I also suggested a
new flavour for the chicken breast sausage to Stuart from the Penn Road
butchers and we tested them last night, they’re proper tasty, Bev’s Boozy
Bangers – chorizo, sundried tomato and red wine flavour, they’d be delicious in
a red wine and onion gravy with mash and veg.
I’m going to make meatballs with mine today and do a pasta dish of some
sort. So my day of chilling will involve
a little experimenting in the kitchen as well.

What I plan to do with mine is chop up some black olives to
mix with the sausagemeat and maybe put a little bit of cheese in each meatball I
make with the mixture, mmm, then have it in a delicious sauce with spaghetti,
ooo I could just eat that right now.
It’s not difficult or too time
consuming to make your own basic tomato sauce for pasta – this is a recipe from
the Weight Watchers app.

cooking spray
3cloves Garlic, crushed
1 large Onion, red, finely
chopped
1 pinch Salt, and freshly ground
black pepper
800g Tinned Tomatoes
1 Vegetable stock cube, make up
to 150ml with hot water
4 Basil leaves, fresh, to garnish

Spray the
low fat cooking spray in a large heavy-based saucepan and gently fry the garlic
for 1 minute. Add the onion and some salt and pepper. Cook over a medium heat
for 4-5 minutes, stirring often, until soft and golden.

Add the
tomatoes and stock to the saucepan. Reduce the heat and simmer gently,
uncovered, for about 40 minutes, stirring occasionally. Reducing the sauce
concentrates it to give a rich, delicious flavour. Check the seasoning, adding
more salt and pepper, if needed. If you like, use a stick blender to partially
blend the sauce.

Cook your
pasta according to pack instructions. Drain well, then return to the saucepan
and add the tomato sauce. Stir and re-heat gently for a few moments, then
serve, garnished with basil leaves.
