One of the most sincere forms of respect is actually
listening to what another has to say.
Been awake since half three, happy days! I enjoyed just lying there for half hour and
knowing I didn’t have to move yet, then when I did move, I played Candy Crush because
my work day is already going to be long enough today without starting it any
earlier.
I went to Michael’s funeral yesterday and it got me
to thinking that he had the right idea, the two things I remember about him were
he laughed a lot, he loved a chuckle and I shared many a joke with him. He also wouldn’t be rushed, he most used words
were “In a minute!” If Michael was in
the moment as he always was - he wasn’t worrying about where he had to be, what
he had to do, what he’d forgot to do, what everyone else wanted him to do - you
weren’t convincing him he needed to be somewhere else, he was enjoying that
moment. We could all learn a lot from
the memory of Michael, he even died well, in his sleep, who doesn’t want
that! Maybe a little before his time but
then he enjoyed his 50 years more than most 50 year olds are enjoying theirs!
I didn’t have time to go to the wake but in memory
and respect of him, I sat in my car and ate fish and chips (a mini special) because
they were his favourite and another thing I’d realised is since he’s passed
away, I’ve craved chips constantly, is he encouraging me to eat chips from the
other side ;)
I did cook me a big pan of grey peas to last me a
few days, plus the salmon will be defrosted now for us to eat today, that’s
lunch sorted and I don’t need to worry about food preparation at all today
thankfully.
I will however be getting this in the slow cooker
ready for tomorrow, it sounds really tasty and low in smart points. It’d go lovely with chips or rice and
veggies.
Crock Pot Beer Chicken Serves 8, 2sp each.
- 2lbs skinless, boneless chicken breasts (9sp)
- 1 bottle or can of your favourite beer (8sp)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tbsp dried oregano
- 1/2 tsp black pepper
- Place all ingredients in the crock pot, and cook on high for 4-5 hrs, or low for 6-8 hrs.
- Feel free to change out the spices and herbs and use whatever you’d like.
It’d be nice in a
pitta bread too with lots of salad and a bottle of beer to drink on a Saturday
night!
Anyway, let’s get
this day started, 7 more meetings left this week and then I plan to spend the
weekend taking care of me, I might get my shed or my office sorted, I might
not, I might sit in front of the tele chilling, I will decide when I
decide. Whatever you’re up to remember
laugh a lot and take your time sometimes, stop and enjoy the moment. x
