Are you a planner?

Sunday 11th July 2021
Done is better than perfect.

Another cracking morning at our Saturday huddle, we really are loving them and having such a good time.  I then took Alfie for a nice walk before driving to B&Q to get more stuff, where I was a little pee'd off because the click & collect queue was the same as the returns one so it would've probably been quicker for me to actually go in the shop for the stuff!   Hey ho, it was half hour I got to stand in relative quiet and relax.

We then spent a couple of ours in the garden watching Terry work on my doors and having a frustration meltdown because the locks that had been on the door were crap and had ruined them, plus he hasn't got enough time again to do everything he wanted to do  Today he's fitting slabs for a shed for his lad, yay to a few quiet hours, I might have a bath, just tell Alexis to stay downstairs cos the door ain't on lol.

Oh if I do say so myself my beef curry was immense, I love that I can finally cook a curry I like, especially a beef one, I've uploaded the recipe onto our website Bev's Beef & Bone Curry (behappyowls.com) if you sign up on the blog, you get automatic updates of recipes I upload.

We've talked about the benefits of planning this week and also come up with lots and lots of ideas of meals we can make, https://www.lovefoodhatewaste.com/portion-planner is great for helping with meal planning, you can choose the ingredient and how many people eating and then it tells you what you need to buy.

Meal Planning also helps save money and our Owls challenge this week is to plan a few meals but to make one of them something they’ve not had before, here's just 5 recipes I found on the love food hate waste website, that can use up those cans of tuna you have in the cupboard.

With these 5 ingredients:

1.    Tuna

2.    Frozen Peas

3.    Loaf of bread

4.    Feta

5.    Potatoes

You could make something tasty like:

Fishcakes with pea mash

Boil potatoes and make a mash, add your tinned tuna to the mash mix and form into patties (some mayonnaise can help to bind the mixture together). Make breadcrumbs from your loaf and serve with cooked peas mashed with lemon/mint/chilli - whatever you have, and a dollop of mayo.

Pea & feta smash on toast

Cook up some frozen peas and once ready roughly mash with a fork, crumble some feta into the mixture and add to toast with a sprinkle of chilli flakes. If you have eggs, this could also be topped with a fried or poached egg.

Baked Potato with Greekish salad

Give the tuna baked potato a bit of an upgrade! Add some sliced onion (and cucumber and tomato if you have it) to tinned tuna. Stir through some feta, red wine vinegar and dried oregano and add to a baked potato. Black olives optional but very much encouraged!

Tuna & Pea Pasta

Cook some pasta from the cupboard (a spaghetti or tagliatelle works well) and pop on some frozen peas. Lightly cook some garlic in olive oil in a pan, add your tuna, pasta, peas, and a touch of pasta water. Stir to combine with a squeeze of lemon if you have it. Season well and serve.

Roast Feta with garlic bread

Take some fresh veggies (onions, peppers and tomatoes work well) and add them to a roasting tray with olive oil and salt & pepper. Nestle a block of feta in the middle and bake. Serve with toast that has been charred on a griddle pan and rubbed with oil and garlic.

If you come up with any other delicious meals, let us know, maybe I can do a blog post on the website of meal ideas with chicken or beef mince etc so you have a go to place for when you next meal plan.

Mwah, luv ya

Love me xx
