Mid week already! REALLY, how'd that happen!

It’s actually pretty simple, either you do it or you don’t!
Morning already, that night went fast, yesterday was another Filling and Healthy day that went well, poached eggs on crumpets, chicken & spinach curry with brown basmati rice and left over stir fry noodles and veg for tea with soy sauce, I snacked on some sliced roast beef too but have to say made it through the day not really thinking about food. 
Today I’m going to make burgers I think with my extra lean beef mince from Sainsbury’s as that comes under the F&H banner, or I might make liver and onions with mash and veggies which would also be F&H.
When we were chatting last night about F&H I remembered the crustless quiche which is completely F&H so I may knock one of those up this week too.
The recipe for crustless quiche, 8pp in the whole thing!
3 eggs,
2 egg whites,
half tub quark (125g)
Any zero pp veg (e.g. broccoli, mushrooms, peas, sweetcorn)
 
You could add smoked bacon 2 rashers if you want an authentic quiche taste. (Remember to add more ProPoints) or use bacon medallions.
 
Mix the quark and eggs until smooth, cook in oven for about 40 minutes. I’m guessing about gas mark 4/5, I haven’t cooked it.
I’d use parchment paper or a pan liner to stop it sticking.
I came across these 7 cardinal rules in life the other day so I thought I’d share them as I agree with them;
1.    Make peace with your past so it doesn’t spoil your present.  You past does not define your future – your actions and beliefs do.
2.    What others think of you is none of your business.  It’s how much you value yourself and how important you think you are that matters!
3.    Time heals almost everything, give it time and the pain will hurt less.  Scars make us who we are; they explain our life and why we are the way we are.  They challenge us and force us to be stronger.
4.    No on is the reason for your own happiness except you yourself.  Waste no time and effort searching for peace and contentment and joy in the world outside.
5.    Don’t compare your life with others, you have no idea what their journey is all about.  If we all three our problems in a pile and saw everyone else’s, we would grab ours back as fast as we could!
6.    STOP thinking too much, it’s alright not to have the answers.  Sometimes there is no answer, not going to be any answer, never has been an answer.  That’s the answer!  Just accept it, move on – NEXT!
7.    SMILE, you don’t own all the problems in the world.  A smile can brighten the darkest day and make life more beautiful.  It is a potential curve to turn a life around and set everything straight.

So yesterday we tried to find a 5 bedroomed cottage to sleep 5 adults, 2 children and 2 dogs but must have Wi-Fi – you have no idea how difficult that is!  We will continue to search, but if anyone knows of one – let us know. ;-)
