The lurgy lingers, but its Thursday so I can rest up for 3 days after my last meeting tonight so I’m still smiling!

Here are a couple of finds for you if you have a sweet tooth;

Sainsbury's flying saucers 20g bag 1pt! Remember them Sherbet filled wafers

Sainsbury’s Pink & white sugar free marshmallows = 75g packet 2.5pts and there were 27 marshmallows in the packet so that means you can have 5 marshmallows for half point.

Sticking with the theme of food and cooking, this recipe was in July’s Weight Watcher magazine and I’m planning on cooking it today, sounds different, I do like a sweet curry.

Tropical Chicken Curry

Low fat cooking spray
1 onion
1 garlic bulb
fresh ginger
2 medium chicken fillet breast
Jalfrezi curry paste
1 small can of pineapple chunks
120g pot Weight Watchers lemon and lime yogurt

6½pts total - 3pts per serving serves 2, 5mins to prepare, 20mins to cook.

Heat a large frying pan and mist with low fat spray. Gently cook 1 chopped onion, 2 chopped garlic cloves and 2.5cm (1in) finely chopped ginger over a low heat for 2 minutes. Turn up the head and add 2 x 165g cubed chicken breasts, stirring until sealed and starting to colour, then stir in 1tbsp jalfrezi curry paste. Add 30ml (10floz) chicken stock, made with ½ a cube and 75g chopped pineapple, stir and cover. Simmer for 15 minutes, or until the chicken is cooked through and the sauce reduced. Take the pan off the heat and stir in 1 x 120g pot Weight Watchers lemon & lime yogurt. Warm gently for a further minute and serve.
