Su'ns up

3rd July 2018
I’m in a flip-flop state of mind.

Oh another hot day to follow a hot night, another afternoon spent in the garden, does life get any better than that.  I even left half my tea last night because I just wasn’t as hungry as I thought I would be, so now I’m contemplating having the leftovers for my breakfast, waste not and all that.

Working in this weather is a killer for so many, even doing day to day stuff, I drove to IKEA yesterday lunchtime and the car was so hot and it made me think of all those commuters, then I drove past lots of moms carrying their shopping and holding their little ones hand looking really uncomfortable.

I’m doing the bare minimum that I have to whilst it’s like this, I’m enjoying it when I can and thinking stuff will wait.  Although today I’m back at work and I think Tuesday night is the hottest venue of the all.  I’m doing a food cooking demo (yeah I know – DOH!) but thankfully the hot stuff will have been pre-done, we’re just going to get all creative in the meeting and put together the finished product.

I bought a couple of large houseplants a few months ago and I’ve enjoyed them so much when I went to IKEA yesterday I treated myself to more, 2 large ones, you can’t not for £9, you can pay that for a large bunch of flowers that’ll last a week if you’re lucky.  The large one I had from there last time almost takes care of itself, I love it.  I also bought some for my bedroom, an Aloe Vera and another succulent plus 3 little ones for the shelf on my wall.  I love the greenery it’s added, they’re also good for my mood, they make me smile and according to the internet the Aloe Vera Listed as one of NASA’s top air-improving plants, the fantastic Aloe works much like the Snake Plant – it emits oxygen at night, making for a more restful slumber. It’s also one of the easiest plants to grow and maintain – it tolerates ‘neglect’ well and so doesn’t require frequent watering.

Dubbed the ‘plant of immortality’ by the Egyptians, it reproduces easily so if you buy one you’ll soon have an Aloe plant for all the rooms in your house. You can even pass on the gift of happy sleep to your family and friends! Keep it on your bedroom window as it does need a lot of direct sunlight.  Guess what everyone’s getting for Christmas ;)

You can also use the gel from the Aloe Vera leaves as a topical treatment for minor cuts and burns, insect bites, dry skin and lots more! It’s simply a must-have plant in every home.
The only plant left on my to get list is a Spider Plant, according NASA tests showed it to remove around 90% of the potentially cancer-causing chemical formaldehyde from the air. Since formaldehyde is found in common household products like adhesives, grout and fillers, it’s a good idea to keep one of these plants around.  In addition to cleansing the air, it will also absorb odours and fumes as well as sustaining oxygen levels in the room, promoting better sleep.  I just wanted one because we had them as kids and they bring back memories.

I love the idea of knowing that in addition to these plants looking good they are powerful toxin eliminator and air purifiers plus they won’t make me fat as I can’t eat them!

Right I’m off, got some food prep to do for my meetings as well as all my usual morning tasks.

Here’s to a very great day BeYOUtiful, taking care of you in every way.

I love a one pot meal

2nd July 2018
Happiness is letting go of what you think your life is supposed to look like and celebrating it for everything that it is.

Lovely out here this morning, a nice breeze and a sunny sky, it’s going to be yet another hot day, I can’t remember the last time it rained ain’t it glorious.

I made the 40 cloves of garlic chicken (recipe at end of blog) yesterday it was lush, I ended up putting it in the slow cooker as my cooker wouldn’t come on the electrics weren’t working on it, however three hours later when I tried again, it did. I transferred it back to the oven and added 55g of orzo I found in cupboard and I have to say it was a delicious bowl of chicken, so good. Chicken thighs for me win hands down if you have the points although if using a slow cooker breasts down dry out so they’re not bad.  Shame you can’t get whole wheat orzo as that would be No Count, it exists but I can’t find a local supplier, so if any one comes across it – let me know.

Oh I’ve found it but it’s online and you pay shipping, unless I spend over £30 https://uk.iherb.com/pr/delallo-orzo-no-65-100-organic-whole-wheat-pasta-16-oz-454-g/32549  maybe I’ll have a look see what else they sell.

I do love a one pot meal, saves on the washing up and my pan above means it can be cooked on hob or in oven, I bought it in the sale in Waitrose, my half price bargain.  Should’ve been £45 paid £22, and when you look on Amazon, even £45 is cheap in comparison to some of them! https://www.waitrose.com/ecom/products/waitrose-cooking-shallow-cast-iron-casserole-dish-cream/642894-558409-558410

Anyway, I have trout for lunch today, not sure what I’m doing with it but I do love a bit of trout, will keep it simple.  I’ve got to get me some breakfast first.  Can you tell I’m hungry by the tone of my blog.  I need to feed, I’m in the mood for food, I think I might be getting my cooking mojo back, I’d lost it for a little time there but now I want to experiment in the kitchen.   I’m thinking a chicken and brown rice one pot, now brown rice usually takes forever to cook but maybe in the oven on low and slow it might work, mmm.  Throw in all the flavours I enjoy, garlic and olives would be going in there, maybe a little chorizo.

I need to stop now as I’ve got work to do, a busy week ending with mom’s 80th on Friday, hoping she’s good on the day and the weather doesn’t break.

Here’s to staying as in control of my appetite as I can, making sure I drink the water, eat the protein, have a good breakfast, all those things I blogged about yesterday to try to keep my cravings at bay.

Happy Monday, let’s make it a very great day BeYOUtiful.

Chicken with 40 cloves of garlic

Serves 4

13sp per serving using thighs,
3sp per serving using breasts,
9sp per serving using legs

2 tbsp regular olive oil (9sp)
Either
Use 8 chicken thighs (skin on, bone in) (42sp) or
use 8 skinless breasts for zero or
use 4 skinless legs for 27sp or

1 bunch (about 6) spring onions
small bunch fresh thyme
40 garlic cloves (approx 3-4 bulbs), unpeeled
2 tbsp dry white wine (1sp)
1½ tsp sea salt flakes or ¾ tsp pouring salt
Ground black pepper

Preheat the oven to 180C/350F/Gas 4. Heat the oil on the hob over a high heat in a wide, shallow, ovenproof and flameproof casserole (that will ultimately fit all the chicken in one layer, and that has a lid). Sear the chicken, skin-side down. This may take two batches, so transfer the browned pieces to a bowl as you go. Once the chicken pieces are seared, transfer them all to the bowl.

Finely slice the spring onions, put them into the casserole and quickly stir-fry them with the leaves torn from a few sprigs of thyme. Put 20 of the unpeeled cloves of garlic (papery excess removed) into the casserole, top with the chicken pieces, skin-side up, then cover with the remaining 20 cloves of garlic.

Add the vermouth (or white wine) to any oily chicken juices left in the bowl. Swill it around and pour this into the casserole. Sprinkle with the salt, grind over the pepper, and add a few more sprigs of thyme. Put on the lid and cook in the oven for 1½ hours.

Lead me not into temptation.

1st July 2018
It is easier to avoid temptation than to resist it.

Walking Alfie at half five on a Sunday morning - do you know what temptations there are at that time of day? Zero! Maybe if I’d been a bit more awake (he got me up at 5am) my mind could’ve been tempting me with my thoughts but as yet it’s not fully working. But yesterday morning at half seven driving to work, having been up for 2 1/2 hours, well temptation was everywhere, my belly and brain were hungry and wanting something nom nom. In the couple of miles drive to my venue I passed a Greggs, Tesco garage and a McDonalds, all open they were! Driving home on a Thursday night I can’t even tell you the total of takeaway places I pass but I know to 2 pizza, 2 Indian, 2 chippy’s at least (slight detour brings even better ones), a Chinese, 2 Co-ops and all in a ten minute drive. How the hell are we supposed to resist temptation when we’re hungry or craving something “nice”? The Co-op have a £5 World Cup meal deal on at the minute 2 pizzas and 4 bottles of Bud for a fiver, bargain apart from the cheese one being 28SP and the double pepperoni 30SP which is great if you have half and loads of salad but really do you think that’s what happened to me Thursday night as I drove home after my 5 meetings and a 13 hour work day, do you think as I drove home craving something “nice” knowing there wasn’t anything quick in the kitchen. Do you think I walked in the Co-op having resisting said meal deal bargain all week and thought to myself ooo I’ll have it but I’ll just have half with salad! I’m not even answering that puzzle because you really wouldn’t need to copy the answer from the back for that one would you. Let’s just say mom enjoyed the other one on Friday, well she managed 3/4 which was the first proper food she’d eaten all week so I was pleased. Oh, what happened to the other 3 slices, erm again, you don’t have to copy the answer from the back for that one either.

How do we resist temptation, I so know I don’t always find it a problem, most Thursdays I drive directly home, Saturday mornings I don’t even notice there’s a Greggs on the way to work. After my meeting Saturday I wasn’t tempted to go in Lidl’s to get a cheap watermelon because I know that’s also where I also buy the best salted almonds in the world and I didn’t want to be tempted.

How come some moments or days the strength in us is strong and others it isn’t, our inner Yoda is nowhere to be seen with his wise and powerful Jedi force. No some days we’re just fuelling our inner greedy goblin and mine is a right imaginative mischievous and malicious glutinous and insatiable monsterous creature.

How do we tame the beast?

And have you noticed we rarely sit there or drive home thinking, ooo I could just eat a nice green salad with a glass of cold water!  Oh no, that just doesn’t happen! Not to anyone I know anyway!

Let’s get practical shall we, I know it all so I need to remind myself and get practicing what I preach.

The first and obvious one is to drink water, I’ve been skipping that first pint because Alfie’s been taking me for a walk the minute I roll out of bed, and then I forget.

Eat more protein! And thanks to Flex you can do that for Zero Smart Points with the likes of chicken and turkey breast, eggs, unsmoked fish and pulses. Yep eating more protein can reduce your appetite and stop you from overeating. It also reduces cravings and helps you feel fuller and satisfied for longer.

Other things include distancing yourself from the cravings, I kept driving Saturday but other ways are to distract yourself are going for a walk, taking a shower, just find a way take your mind of it for a while.

Plan your meals, if I’d known what I was having Thursday night, I’d not have been thinking “What shall I eat for my tea” so I’d have been less tempted and less likely to be craving something scrumptious.

Of course it’s always good to avoid getting really hungry, that’s why I was ravenous Saturday morning I hadn’t eaten for hours (yeah I know I’d been asleep but I didn’t have a proper tea either).

Oh and find a way to handle or eliminate stress! Ha I hear you voice, I know it’s easier said than done but did you know stress can induce food cravings and influence our eating behaviours, especially for us women, when we’re stressed we have been shown to eat significantly more calories and experience more cravings than non-stressed women - duh really!

Also, stress raises your blood levels of cortisol, a hormone that can make you gain weight, especially in the belly area - boo!  Now I know where this new extended belly of mine has come from, it’s all the stress hormones lol!

Okay, so as difficult as it is try to minimize stress in your environment by planning ahead, maybe you could try a bit of meditating (sitting quiet with your eyes closed for a few minutes will do) and generally slowing down where possible.  Again I know that ain’t easy, but hide on the loo if you need to, pretend you’re having a number 2 and just sit there and close your eyes and take a few deep breathes.

Be more mindful when you actually do eat, enjoy it - taste it don’t just ram it in whilst watching tele and devouring everything short of your fingers.  There’s a difference between loving food and overeating whilst not even tasting it.

Oh and get some sleep, our appetite is largely affected by hormones that fluctuate throughout the day. Sleep deprivation can lead to strong cravings, there are studies to support this, showing that sleep-deprived people are up to 55% more likely to become obese, compared to people who get enough sleep.  For this reason alone, getting some sleep is worth a try.

Of course, eating proper meals will always help, hunger and a lack of key nutrients can and most likely will cause cravings.  If you eat proper meals, your body will get the goodness it needs and you won’t be so tempted.  Eat good snacks too and jobs a good un.

Well after all that and a dog walk, I’m ready for my breakfast, I’m think eggs with spinach because I’ve just read something about spinach extract with a meal may reduce appetite and cravings, so I’m thinking well if the extract does that, surely the real thing is better!

Here’s to a very great day, the sun is going to shine AGAIN, how fab is that.  I know no one wants to hear “save water” but you know we should be, I’m now starting to use my washing up water to water my garden plants.  I’ve just used Alfie’s stale water to water the houseplants. Just be mindful of your water use, don’t leave the tap running for ages and my favourite from when I lived in Torquay for a short time is regarding the toilet, “if it’s yellow let it mellow, if it’s brown flush it down” ;-) I’ll leave you with that thought, ha ha.
