It's the weekend!

Saturday 11th November 2023
Pork, stuffing and apple sauce baps were amazing!  This image doesn't do it justice but Elle's instructions worked perfectly, my half price pork joint filled the slow cooker, I put a bit of water in there and a piece of foil over the top and left it all day whilst I cleaned the house thoroughly, it was like a little palace by the time I'd finished.

I think I put it on about half 8 on high and took it off just before 3pm, took the pork out and added bisto to the liquid in the slow cooker, took the fat and skin off the pork and put it back in then shredded it with two forks and mixed together.  Oh my days it was good.  I'd made stuffing too which I put at the side of the pot and left it on warm until we got back about half 8.  Aryn had 3 baps whilst we were out so I'm assuming he was impressed as he'd already had the leftover pie after school.

I had two and himself had four saying how good they were and he'd have them again.  For me they were great because it cooked itself and them stayed warm till we got home.   More slow cooker Friday meals needed I think.

Costwise, £4.78 for the pork, stuffings on offer 85p in Sainsburys, apple sauce (I paid £1.20 in the Co-op because I forgot to buy it, own branded is 60p in Sainsbury's, I have to say it was a good apple sauce though! Worth the extra 60p).  Bread rolls 6 for 90p, I bought 12, there's 3 left, I bet they don't last till lunchtime because there's pork left too.

12 cobs would cost 72p a cob, even if the pork wasn't on offer, that's £1.12 per cob.  A shoulder joint would be a cheaper cut anyway (same price as the half price joint I bought) and cook brilliantly in the slow cooker.

I've got to use the beef mince today, I didn't use it yesterday because I'd cleaned the kitchen so well, I didn't want to make a mess in it again so soon :)

I was gonna do spag bol, but I'm feeling the cottage pie ish vibe, I can hide lots of veggies in that which Aryn won't notice so much, stick some cheese on top, use packet mash, can't beat a packet of Idahoan, I already have onions, carrots, spinach and brocolli.  So it's not gonna be a cottage pie as such, just a savoury pan of mince with veggies topped with mash and cheese, yeah that's what I'll do.

I love food I do!  If I had spuds, I could do jackets, all crispy on the outside and scoop out the middle put the mince inside and make em that way, that would be nice.  Oh I found a recipe for spuds yesterday that I so need in my life!

I mean if that image doesn't make you want to dive right in, then I don't know if I can help you!

Here's the recipe Cheesy Bacon Potato Stacks | Don't Go Bacon My Heart (dontgobaconmyheart.co.uk) calories are a little high of course but cream, spuds and bacon they're gonna be aren't they!

Can you imagine them stacked on top of the mince mixture, or served on the side, NOW YOU'RE TALKING!  I'd have to buy all those ingredients though.

Oh Fair play to Gousto, I paused my deliveries a couple of weeks ago then suddenly when I checked my account, they'd took £52 for a box to be delivered Monday, I'm like NOOOOOO, I can't afford that this week, that's my food shopping money for the week fgs, so I called them and he said I was past the cancel time.  I can't obviously prove I'd paused my deliveries but I told them I couldn't afford it and I didn't want it, that it was my shopping money so he said hold the line whilst I see what can be done.  Came back and said I can give you a 30% discount, to which I said no I don't want it at all, I can't afford it, I'm skint.  So off he went for a few more minutes and came back on said on this occasion he'd had approval to refund me, that he may not be able to stop the box being delivered and if that happened I could keep it!  Bonus if that happens, but massive relief as I've heard so many people say they've had difficulties with these food meal companies.

Aryn's had a letter about work experience, he missed the assembly about it so we're not completely up to speed with the plan, just know it's 11-14 June 2024 and from the paperwork the company has to have relevant insurance checks by Wolverhampton Education Business Partnership.  Deep Sigh, he has no idea what he wants to do which doesn't help either.

To say I did so much yesterday, my main pain has eased, I took some painkillers when I'd done to ease it.  My knee woke me a few times in the night, I'm gonna use some of that gel on it this morning, give that a go, even if it just eases it a little.  The rest of my aches are loads better than they have been though.

Time to get ready for work, looking forward to my day.  I'm truly grateful for my world,  I love the weekends when we get time together even if we do nothing, it's the best feeling to enjoy being quiet with someone.

 Here's to enjoying the weekend.

Mwah, luv ya

Love me
