Hungry already! All in my head I know!

Sunday 12th January 2020
The world needs you to be the best version of yourself.

I cried such a lot yesterday, but I've woken up good again.  I don't know what come over me, it started after my workshop when my bestie asked me about my birthday plans (I don't have any!) then later at home one minute I was okay, then the next I looked at Alfie and they tears  just started and theywouldn't stop.  Mom keeps asking what's the matter with Alfie and when I explain, sometimes she understands, other times she gets annoyed about it, but no time is it easy, then watching him just breaks my heart a little bit.  I know I'll be okay, it's just another adjustment I need to make and a situation I need to get used to but it's such a bloody shame, of all the things that could have caused what will be the end of his life at some point, doggy dementia is just some sort of sick joke in this house.

Anyway, today's a new day and you've got to smile, I just went on the Thesaurus website and the word of the day is;

euchred

yoo-kerd ]
adjective
Australian Informal.
utterly done in or at the end of one's tether; exhausted.

And I can tell ya, I was officially euchred yesterday!  That's made me smile I have to admit.

Now you can't see because you're not here but as I finished typing the sentence above, mom went to the bathroom so I've just been and sorted her drugs and drink out, helped her get dressed and managed to get Alfie's medication down him too, all before 6am!   No rest for the wicked they say don't they, as a member said to me yesterday, we must have been real evil!

I didn't have a great food day yesterday, I'm not going to lie, a weight loss tomorrow would be a miracle, I had a Greggs sausage baguette for my breakfast but not from my usual one and it wasn't hot, it wasn't as good as usual so I may be cured and have them out of my system, I shall make my own next time I fancy one, I've got some low fat sausages which I'm going to cook and freeze, then I can microwave them when I fancy a sarnie, I've got to say the baguettes from Greggs aren't the best, they're a bit too hard so I'll find an alternative there.  It was Tesco's fault, I went in the garage for a baguette to make a fish finger sandwich for my tea and they didn't have any but Greggs was next door so I knew as I was walking in, with my mood how it was, that it wasn't going to end well!  I never did have the fish fingers later, I ate the other baguette on its own with a bit of butter!  Yeah 60+ Smart Points consumed I'm afraid.  Ten of them on this delicious piece of food that my bestie got for me from Home Bargains;

10SP but I didn't eat the chilli sauce, I had a little mint sauce on it instead.  Not bad if you have a craving for a bit of naughty.

I also bought some whoopsie diced beef from the Tesco garage (9SP for 400g pack), I put it in the slow cooker with Patak's Saag masala curry sauce (11SP per jar) so if you serve 4 with it, it's 5SP a serving. I did a double batch and will freeze it for Thursday nights or other can't be bothered moments.  I can have it with cauliflower rice, that way I could have bigger portions, because I'm greedy!

I was going to make the garlic chicken recipe today, but now I'm not so sure after making the saag masala, we'd mentioned it in a meeting earlier in the week and I fancied it, here's the recipe in case you fancy making it;

Garlic chicken curry

Feeds 2, 5SP per serving 💙💜 6SP per serving 💚

10 minutes prep time, plus marinating. Cook time 20 minutes

Small bunch fresh coriander

3 garlic cloves, crushed

2tsp garam masala

1tbsp mango chutney (4SP)

2 x 125g skinless chicken breast fillets (2SP on green)

1 tsp vegetable oil (1SP)

1 onion, thinly sliced

400g tin chopped tomatoes

2 tbsp 0% fat natural Greek yogurt
  • Cut most of the stalks from the coriander and set the leaves aside. Finely chop the stalks and mix with the garlic, garam masala, chutney and a pinch of salt to form a paste.
  • Using a sharp knife, cut small slashes in each chicken fillet then flatten them slightly. Spread over the paste and marinate in the fridge for at least 30 minutes (or overnight).
  • Heat the oil in a large non-stick frying pan or wok and fry the onion for 5 minutes or until softened. Add the chicken and marinade and turn to coat in the onions. Fry for 6-8 minutes, turning the chicken and stirring regularly. Add the tomatoes and simmer for 5 minutes. Chop the coriander leaves and stir half of them into the sauce.
  • Mix the remaining coriander leaves with the yogurt
  • Serve.

It's really tasty this is and I'm sure members in the past have just thrown it all in the slow cooker and left it to do it's thing.

The other recipe that was mentioned yesterday as we were talking takeaways was my chow mien one, here it is;

Chicken Chow Mein

Serves 4, 7 Smart Points per serving ðŸ’šðŸ’œðŸ’™
150g (5oz) cooked chicken breast (cut into thin strips)  1SP 💚 or 0SP on 💜💙 so you can use more
1 tbsp vegetable oil (4SP)
¼ tsp white pepper
¼ tsp chopped garlic
240g dried egg noodles (22SP)
Bean sprouts (1 handful)
½ small onion (sliced)
½ tsp salt
1 tbsp dark soy sauce (1SP)
1 tsp light soy sauce
1 tsp sesame oil

Cook noodles by soaking in boiling water for 5-10 minutes or until soft to touch. Clean wok, heat wok until hot and slightly smoky. Add 1 tablespoon oil. Add the chicken and onions and stir-fry for 30 seconds. Turn to low heat and add the garlic and stir-fry for another 15 seconds.

Now add the bean sprouts and noodles. Stir-fry for 4-5 minutes or until the noodles are soft. Add the salt, dark soy sauce and light soy sauce.

Stir-fry for another minute. Finally add the pepper and sesame oil and stir in.

Right now I'm hungry, I could eat my own arm already, I've had this incredible appetite all week if I'm honest but I'm trying, I really am.  I'm pleased that I have some niceness to try thanks to my friends, Vicky got me an M&S count on us chow mien to give a go, it's only 3SP on blue!  Then I have 2 of the WW meals thanks to Tina, I've been fancying them for a while too, the Korean one and the chicken tikka masala.
I need to go and get me some fruit to tide me over I think, before I have my dinner for my breakfast, we know it's happened before, my belly doesn't have clock, it'll eat anything, anytime, anywhere.
Here's hoping I have a better WW day and a better day all round please.  Hope you have a good one too, mwah...

Luv ya,

Love me xx
