Yay, I’ve gone all technological with my daily emailing, I’ve found a package that helps me do it. If you’ve not received or read my daily emails before, I often send recipes, ideas, thoughts and suggestions to not only encourage you to lose weight, but also to realise you’re amazing and gorgeous whatever you weigh and can have the fabulous life that you deserve. Xx

Setting all this up has obviously kept me busy this week and my meetings are also buzzing, so far this year you’ve all lost 505 stone! That’s just amazing in under 9 weeks, the new ProPoints plan is proving to be really successful. I never get tired of seeing the happy faces at the scale, on lady on Tuesday night was so thrilled to lose 5lb in her first week she couldn’t wait to tell her daughter and granddaughter, she was jumping round the room like she’d won an Oscar.

It’s so important to realise it’s not a race, and everyone’s different, I have a close circle of six friends and we are all different ages, heights, shapes and ages and we all eat different types of food and all lose weight at different paces, sometimes that’s just down to luck! A healthy weight loss is anything up to 2lb a week, and if you’re losing a pound a week, smile because that means in a year you’ll have lost at least 52lb, a sack of potatoes isn’t about the same, go try pick one up. It’s not just the weight loss that’s important, it’s the changing of habits forever so that you don’t put it back on, so it stays off and you can enjoy your life without having to worry about eating.

I’m still managing to cook and yesterday I tried diet coke chicken sounds odd, tastes pretty good though, recipe below. Have a Tremendous Thursday and hopefully you won’t be ‘unsubscribing’ so you’ll get to read me tomorrow too.

Diet Coke Chicken, serves 4, 6pp each serving

Things you’ll need to cook it;

4 medium, uncooked, skinless chicken breast (16pp)
1 can of Diet Coke (or any other diet cola product)
1 cup of ketchup (8pp)
Your appetite
Any side dish;
e.g. rice, potato, couscous, veggies (remember to add the extra ProPoints)

(If you only want to cook 2 chicken breasts, just use a half can of Diet Coke and a half cup of ketchup)

Directions:

Pour the can of Diet Coke into a medium skillet. Mix in 1 cup of ketchup until ketchup is somewhat separated. Place the 4 chicken breasts in the skillet. Preferably they will be mostly covered by the Diet Coke and ketchup mixture. Cover and simmer on medium heat. Once the sauce starts to thicken, you may want to stir occasionally. Cook for approximately 45 minutes. You will know when it is done, as ketchup and Diet Coke will turn into a thick marinara-like sauce.

This recipe creates extremely tender and juicy chicken breasts along with a sweet marinara-like sauce. You definitely do not taste the Diet Coke nor the ketchup, they come together to form a delicious sauce that nobody will ever guess the ingredients you started out with.

This dish is very tasty and healthy! One chicken breast has about 142 calories and 3 grams of fat. Diet Coke has no calories or fat. The following is a list of some healthy side dishes you can make to accompany the Diet Coke Chicken.
