Even if we can’t change the reality of a situation, we can choose our response. The wise know when to be proactive and when to let things be. When we stop trying to control life – and other people – doors open, miracles unfold, and the world is more hospitable. The path of least resistance leads to happiness.
Thursday already, this week has flown! Another day of healthy eating yesterday, I made a delicious fruity tikka masala, it was scrumptious, the recipes below and you can see a photo on my blog. I also had a delicious breakfast with raspberries, 0% greek yogurt, oats and honey, the even meal was so successful but at least it was healthy!
Serves 4 at 4 points per portion
400g Chicken breast strips (cut into pieces) or use breast (8.5pts)
Tin Chopped Tomatoes
250g mushrooms
Bundle spring onions chopped
75g Tikka Masala Paste (3.5pts)
1 pineapple & 1 mango Weight Watchers Yogurts (1.5pts)
In a frying pan, stir fry spring onions in a bit of water, after a couple of minutes add tikka masala paste, stir for a minute or two then add chicken and after a few more minutes add tinned tomatoes, simmer for 15 minutes or until cooked. Finally stir in yogurts and warm through.
I served it with ½ pack of Vegetable Pilau Microwave Rice. (2.5pts)
Great weight losses in the meetings this week, especially considering the time of year. I’ve even given out a few 50lb certificates and gold packs which is always a good feelings.
