My own Fakeaways helped me through the weekend!

20th February 2017
You've got to be a beginner before you can be anything else.
A lovely restful day I had yesterday, a little bit of office work on the morning, a couple of dog walks (not too far, he's turned into a lazy boy), I got a little further through my latest book, then we watched some TV and I cooked a good dinner.  My big breakfast had kept me full so long I only ate twice yesterday as we had an early night.

Breakfast;

Dinner;

I tweaked a recipe I found on the internet to make it No Count

No Count Baked Tandoori Chicken

2 whole chicken legs (drumsticks and thighs), or its equivalent, skinless, bone-in
250g Greek yogurt (use 0% for No Count)
1 lime
2 cloves garlic, smashed
1tbsp tandoori masala spice blend
1 tsp garam masala
A pinch of turmeric
1 tbsp olive oil (from daily healthy allowance)
1-inch piece fresh ginger, peeled and grated (I used a dollop of puree)
coriander, finely chopped
Salt and fresh cracked black pepper

1. Squeeze the juice from the lime into a large bowl. Add Greek yogurt, salt and pepper. Stir in spices, ginger, garlic and olive oil.
2. Coat chicken with this mixture, cover with plastic wrap and refrigerate for 1 hour minimum.
3. Preheat oven at 460°F (240°C) Transfer chicken pieces to an oven-proof casserole dish and bake uncovered for 30-45 minutes, turning occasionally.
4. You can grill for an additional 2 to 3 minutes to char the chicken a little bit more if you want. Sprinkle with coriander before serving.
Notes: Serve over brown rice. You can substitute basil or mint for coriander.

I cooked mine on Gas mark 5 and cooked it slowly and for a bit longer, for the last 15 minutes I took it out of the sauce as it wasn't looking great and browned it in oven on a wire rack about a baking tray and ate it as a dry dish.  It was delicious and so tender.

I also spent half hour in the garden yesterday, the first time this year, the crocus are out in my baskets and it looked like it needed a bit of love, so I cleared some of the dead stuff and pulled up some of the lamium (dead nettle) which is doing its best to take over the garden, clever little sucker can root everywhere and anywhere, hard core plant he is!  I'm looking forward to making my garden pretty again this year, I was a particularly lazy gardener last year as we spent so many of my days off driving about and visiting cake places, I'm not sure moms going to want to do quite so much of that this year so I'll be making our garden gorgeous and pretty to sit out in.

It's all about getting that balance between work and life, I absolutely love my work but for my own wellbeing I need to have other things in my life that I enjoy.

Wellbeing is described as the state of being comfortable, healthy, or happy. It’s all personal isn’t it? For some it could mean more time with your family or getting out and about to socialise with friends  Maybe you'd rather be on the sofa with a good book and a glass of the vino? (Oh I can't wait for that on March 1st!)   I like to do different things, and for now it's enjoying my tv and moms company, this spring/summer it's going to be getting outdoors, back in my garden this year and make it pretty.  I can listen to my audio books when I'm out there, planting, then relaxing and enjoying the sunshine (yep it's going to be a good summer!).

Your wellbeing should be important to you, so start to make time to do more of what makes you happy in 2017. Weight Watchers encourage their members to Smile, so are you?  And what makes you smile?  Stop for a moment and think about how you can invest in a bit of “you time” this year and Smile.   What will you say yes to in 2017?  Weight loss is great if it makes you a healthier person, it doesn't guarantee you'll become a happier person, you have to work on that too, which is why we have more than one book in our programme material at Weight Watchers - EAT, SMILE & MOVE, put them all together and you're onto a winner.

No gimmicks, no quick fixes, no fads, no chemicals, no silly drinks, just good healthy food, a bit more movement and getting your head in a good place, finding your smile and realising there's more to life than food.  Sounds good doesn't it.

Happy Monday BeYOUtiful, here's to an awesome day xx
