My members are on a mission!

Oh man, we've talked takeaways and fakeaways all week and how I drove past the curry house last night is beyond me, but I resisted and instead I had a ready meal from the fridge, an innocent veg pot, indian lentil sambar for 8 ProPoints, it wasn't bad either!



The fakeaway meals I'm seeing in my group are just incredible, it really does make you realise that not only can you save ProPoints but money too, if you knock anything up this weekend, share it on Facebook, tag me so I can drool over the photos and use the hashtag #WWFakeaway so everyone else can find it too!  I'm hoping it's going encourage me to have a go at my own.

The one meal I am fancying is home made burgers with a babybel inside, nom nom nom, ooo yeah that would taste amazing, on a big bap with gherkins!  That might need to happen very soon.  I'm just so damn busy this weekend it might not be soon.

I also love a bit of KFC and apparently this recipe has it nailed!  It's from a chap named Daniel, he's been perfecting his fakeaway KFC style chicken recipe and this is it.

KFC style chicken

A great recipe for making delicious Kentucky fried chicken at home...

Prep: 15 minutes, Cook: 33 minutes,
Recipe makes 10-12 good size pieces of chicken.

 

Ingredients (serves 8+)

For the coating
  • 200g flour - 19pp
  • 1 tsp mustard powder
  • 1 tsp ginger powder
  • 3 tsp salt
  • 1 tsp white pepper
  • 2 tsp black pepper
  • 2 tsp thyme
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

For dredging
  • 200ml milk - 2pp
  • 2 tbsp lemon juice

For the gravy
  • 1 tbsp butter
  • water, boiled

Chicken pieces of choice =

Chicken breast = 4pp per 165g breast
Chicken leg quarter, skinless, raw = 7pp per 135g
Chicken thighs, skinless - approx 4pp each
Chicken drumstick - approx 2-3pp each

 

You will need:

Baking tray with rack, Frying pan, Large bowl, Small bowl

Handy tip

Serve with ketchup, mayo or KFC style gravy!

1.    Preheat oven to 180'C/Gas mark 4 and heat a pan on medium-high with 1cm oil in it
2.    Put milk into small bowl and add the lemon juice - stir and leave
3.    Mix all the dry ingredients in the large bowl
4.    Toss the chicken in the dry flour mix one at a time, place on the rack
5.    Dip the chicken into the milk/lemon mix (it should be nice and thick now, like cream)
6.    Shake off the excess liquid and place into the flour mix again - shake the bowl, flip over the chicken piece and shake again, take it out and place it back onto the rack
7.    Do this until all of the pieces are coated completely
8.    Fry the chicken 2-3 pieces at a time (don't crowd the pan) until they start to colour (about 2-3 mins each side) and place back onto the rack
9.    When all the pieces are done place the baking tray in the oven for 30 minutes to finish them off, turning over halfway through

For the gravy
1.    Pour as much oil out of the frying pan as you can without losing any of the golden flour mix that will no doubt be at the bottom of the pan by now
2.    Lower the temperature of the hob to medium low and melt the butter
3.    Once the butter has melted remove from the heat and add 1-2 tbsp of flour mix to the pan and stir
4.    Cook for 4 minutes - 30 seconds on the hob, 30 seconds off (it keeps the flour from burning)
5.    Take the frying pan off the heat and add freshly boiled water a little bit at a time, stirring constantly until you have the gravy at the consistency that you like
6.    Turn the gravy down to the lowest setting to keep warm until the chicken is done
7.    Serve

So the coating works out at approximately 2pp per piece of chicken, then just add the ProPoints for whatever piece of chicken you have, so a chicken breast would be 6pp total, leg quarter 9pp, thigh 4pp, drumstick 5pp.   If you try it, let me know if it's any good? 



Anyway my cars off for its MOT and service today, so I'm car less, I will be walking to my massage later, busy day, paperwork first, then sorting all the tombola prizes out for tomorrows open day at the fitness centre where I do my meeting, pop along and say hi if you're passing and of course have a look round their facilities.
