A day of rest has done me the world of good, I didn’t even get dressed yesterday, once I’d done the must do morning paperwork, I rested and I can happily share that the tonsils have separated thankfully and I just have a bit of a head cold which can be handled and coped with, I don’t mind them much better than full blown lurgy.  I shall still use it as an excuse to relax lots this weekend though just to be on the safe side ;)

Yes I had a very indulgent day, listing to Dave Gilmour on the morning whilst doing my paperwork, I do love a bit of Pink Floyd so decided to have a listen to some of his solo stuff, I’m looking forward to hearing their new album next month.  Then we watched a couple of movies, I found The Wolf of Wall Street not to my taste but had to finish watching it to see what happened, if I’d known the storyline I don’t think I’d have watched it at all, but hey ho, did enjoy the other things something about the best man on Sky demand, that was a nice film, I needed nice yesterday.

And of course the day was finished off with an early night, 8.15 and almost 9 hours of good sleep, just what the body needed, feeling a little more alive for it anyway.

I came across this recipe yesterday for strawberry frozen yogurt that may be worth a try, especially as it’s filling & healthy, if you used the unsweetened milk
2 cups frozen strawberries
1 frozen banana, chunked
1/2 cup almond milk
stevia to taste (or use another sweetener)
pinch salt

Process until soft serve consistency. Freeze for 10 minutes, then eat!

Spaghetti with chorizo and rosemary pangritata
This spaghetti with chorizo is a quick and easy recipe perfect for a Friday night treat. Pangritata, sometimes called poor man’s parmesan, is a mix of fried breadcrumbs and herbs used add flavour and texture to pasta dishes.
30 minutes. Serves 2. Easy
  • spaghetti 150g (14pp)
  • olive oil (3tbsp = 12pp)
  • chorizo 100g, diced (8pp)
  • chilli flakes a pinch (optional)
  • garlic 1 clove, finely sliced
  • cherry tomatoes 150g
  • ciabatta 1/2 loaf, crust removed and pulsed to rough breadcrumbs
    (1lb loaf would be 34pp, so half loaf with crust removed needs weighing, each 100g = 8pp)
  • rosemary sprigs 2, needles chopped
Cook the spaghetti following pack instructions. Heat 2 tbsp olive oil in a pan and add the chorizo. Cook until starting to crisp up then add the chilli flakes, garlic and tomatoes. Cook until the tomatoes just start to burst. Heat another tbsp oil in pan and add the breadcrumbs. Cook stirring until they become crisp and crunchy. Add the rosemary and stir through.
Drain the pasta and tip into the chorizo pan. Toss together then serve sprinkled with the rosemary pangritata.
PER SERVING 771 kcals, protein 26.4g, carbs 92g, fat 32.6g, sat fat 7.8g, fibre 4.7g, salt 1.8g
Sounds amazing but very high in ProPoint, if you use their nutritional information it would be 21pp per serving!  Of course you could make it lower by using less oil but I think this is a meal that’s kept for when you’re having a treat and using some of those weekly ProPoints, of course if you were on F&H and used wholewheat spaghetti you’d save those ProPoints, so it would only be 14pp from your weeklies. 

That’s the beauty of Weight Watchers you don’t have to look at anything and think “I can’t have that” because there is always a way to ensure you can!

Today I shall mostly be doing a little bit of this and that but mostly chilling, I’ve got a slow cooker recipe book to peruse that one of my BeYOUtiful members bought me, I have my kindle loaded with a book, I even have an audio book on standby – spoilt for choice, lazy weekend I’m liking the idea of, my fitbit isn’t getting much action that’s for sure!
