Happy Pancake Day! You can have them Simple Start, F&H or ProPointed!

Old habits die hard; apparently eating doesn't take your mind off the fact your moms having surgery on Wednesday! I went to bed in the end to stop myself from eating more when I realised what we’d both been doing - using food as a distraction, it didn’t work!  The good news was the pre op went well and the operation will be going ahead Wednesday morning, hopefully she should only be kept in overnight. 

So today I’m going to follow Filling & Healthy so that if I do eat a bit more than usual, at least it’s good stuff.  I’m thinking egg, peas and chips for lunch as that’s one of mom’s favourite meals, I might have bacon in a wrap for breakfast as I don’t have any low calorie brown bread, and then tea will be something I think about – maybe fish.

It was a great distraction that didn’t cost me any ProPoints and I do love to be reminded of how fabulous our members are, some incredible weight losses have been seen this year with the introduction of Simple Start, my members alone have lost 313 stone!  Yes it really does work and I love that whether you’re counting ProPoints or eating Filling & Healthy foods, you can always enjoy delicious food - Eat Gorgeous as I like to say!

I’ve just realised today’s Pancake Day, I’ve not got to worry about that as I’m really not a fan of pancakes at all, however I know a lot of you will be – so what’s the plan?  Are you on F&H or PP’s, here’s a version to cover both;


SimpleStart F&H Pancakes 

4pp total or F&H
Ingredients

1 banana
2 eggs- 4pp
1 tsp vanilla extract
1 tsp of sweetener
1/2 tsp cinnamon

Whisk all of the ingredients together, either by hand or preferably in a blender.  It should be a smooth batter. 

Over a medium heat, mist a non stick pan with spray oil.  When the oil is hot, pour 2 Tbl of the batter onto the hot pan.   When bubbles start appearing and the batter goes a dull colour rather than shiny, flip the pancake over. 

Repeat until the batter is all used.   Top with your favourite toppings and serve immediately. 

Here’s another F&H option

Total Greek Healthy Pancake Recipe
10pp total if using 1 teaspoon of oil, or completely F&H

2 eggs (4pp)
40g oat flour* (4pp)
100g 0% fat Total Greek yoghurt (1pp)
Oil spray for cooking or a pan liner cut to fit your frying pan!
Extras - Vanilla essence and sweetener if required

*To make oat flour simply blend rolled oats (porridge oats) in a blender for a few seconds. You can make a big batch of oat flour at once and store it in an air-tight jar! Or you could use Ultra Fine Scottish Oats (Ground Oats).

Add your eggs, oat flour, Greek yoghurt and extra flavours if using to a bowl

Whisk until light & fluffy - I used an electric whisk

Heat your pan on a medium heat, with your oil, and pour in small amounts of the mixture (to create a  pancake stack cook 2 small pancakes in the pan for the base and then cook batches of 3 pancakes per pan for the rest of the pancake stack!)

Cook each pancake for 2-3 minutes before flipping with a spatula and placing on a plate once cooked - repeat until you have none of the mixture left

Stack your pancakes in a pile and top with your favourite toppings - Greek yoghurt, banana, frozen berries, cinnamon

And lastly if you’d like to stick with good old fashioned original Pancakes, here’s the recipe;

Pancakes

Makes 12, total 14pp, then divide between how many you manage to make!

125 g Flour, Wheat, White, Plain, sifted 11pp
1 medium Egg, Whole 2pp
1/2 serving(s) Milk, Skimmed (1/4 pint) 1pp
1 spray(s) Cooking Spray, Calorie Controlled

Put the flour into a bowl and break the egg into the centre.  Add the milk gradually beating into a batter.  Pour the batter into a jug.

Heat a non-stick frying pan.  Spray lightly with low-fat cooking spray.  Pour in 3 tbsp batter and quickly swirl the pan to coat the base.  Cook until the batter becomes firm and bubbles appear.
Flip the pancake over.  Serve with fresh lemon, artificial sweetener or sugar (at extra ProPoints!).
