What day is it?

10th July 2013
Life is short, don’t waste it being sad.  Be who you are, be happy, be free – be whatever you want to be!
 
When I woke up this morning, I didn’t know what day it was, I had to think for a few minutes to remember!   Don’t remember the last time that happened, but I soon worked out it was Wednesday, middle of the week, what some people now call ‘hump day’ which I’m not keen on I have to say.
Yesterday was a good day, sun blazing, work got done quickly and I got to have an hour at lunchtime in the garden with mom enjoying the sunshine, although we ended up sitting in the shade.  I made a conscious effort to include some fruit and veggies because I’ve not been doing so.  For lunch I had a nice chicken salad, then for tea I had smoked haddock, mash and griddled courgettes.  I also had strawberries and mango with a coconut flavoured yogurt on it for 2pp.  It’s easy not to bother in this weather because it’s too hot and you don’t want to spend time in the kitchen preparing, which is why I bought a ready cooked chicken, and the haddock only took ten minutes to poach.
This weeks free Weight Watcher meeting magazine ‘Your Week’ has some tasty looking smoothies in it, I might have a go at, it’s been a while since I indulged in a smoothie and it’s a great way to include your daily fruit intake, especially if your like me and don’t really eat fruit.  Ooo I have some frozen raspberries too that I can use and I think natural yogurt, sorted that’s breakfast decided or it might be part of my lunch as I’ve got some leftover haddock I might have for breakfast.
One of my favourite smoothies is;
Coffee and Banana Smoothie
4pp per serving, serves 1
 
1/2 medium Banana, ripe
150 g Yogurt, Greek, 0% Fat
200 ml Milk, Skimmed, cold (7fl.oz)
Sprinkle ground Cinnamon, plus extra for dusting
2 teaspoons Coffee
6 ice-cubes
 
Place all the ingredients except the ice cubes into a blender. Process, adding the ice cubes one at a time until smooth and creamy.  Pour into a tall glass, dust with cinnamon and serve.
 
A good caffeine boost to get you going in the morning.
 
This is another recipe with fruit I’ve eaten that I really enjoyed, something different;
 
Strawberries with Balsamic Vinegar
This is a unique, gourmet way to serve this fantastic summer fruit! The balsamic vinegar brings out the berries' beautiful colour and truly enhances their flavour. Great served by themselves, or over vanilla ice cream for extra ProPoints.
Serves 6, 1pp each serving
 
450 g fresh strawberries, hulled and large berries cut in half
30ml balsamic vinegar
50g white sugar (6pp)
¼ teaspoon freshly ground black pepper, or to taste
Place strawberries in a bowl. Drizzle vinegar over strawberries, and sprinkle with sugar. Stir gently to combine. Cover, and let sit at room temperature for at least 1 hour but not more than 4 hours. Just before serving, grind pepper over berries.
Sounds weird but it works and is delicious!
Right it’s Wednesday and I have a lot to do and in this heat I don’t want to be rushing about, so I’ll get gone and started.
