Feed me it's cold!

8th February 2012
Keep a green tree in your heart and perhaps a songbird will come. Chinese proverb
Chicken curry and chips, now that’s what I call lunch on a miserable day like it was yesterday, and it was delicious 13pp, using Weight Watchers curry paste and frozen chips, it’s easy to have your favourite foods for less ProPoints with a little thought, then you can save the leftover PP for the good stuff.  I also made a potato bake using Homepride Creamy cheese and ham sauce, made up it works out at 10pp a portion, wasn’t bad either, I reckon the sauce would be nice used on cauliflower maybe.
Ooo it’s cold this morning, I like good filling food in this weather and I’ve just seen a recipe in a running email for a nice warming soup for only 3pp in entire recipe, here it is
Curried Squash with Coconut Soup
Butternut squash has just 80kcal in 200g, which provides half of your daily vitamin C needs. It’s also a great source of potassium and magnesium, “two electrolytes most runners are deficient in”, says sports nutritionist Lisa Dorfman. Low-fat coconut milk adds creamy texture and flavour with 60 per cent fewer calories than the full-fat variety. Curry powder contains turmeric, which research shows keeps your joints healthy and protects against arthritis.

Make it
1 In a blender, combine 600g of cubed, steamed butternut squash, 120ml of low-fat coconut milk (3pp), 180ml of chicken stock, one teaspoon of curry powder and a quarter of a teaspoon of salt.
2 Puree until smooth, add more salt to taste and reheat if necessary. For additional ProPoints Top each bowl with a dollop of plain Greek yoghurt (low fat 1 tbsp = 1pp), preferably with a suitably flamboyant at-table flourish.
That does sound cook for 1pp a bowl, mmm might get a squash today, this afternoon I’m cooking Pork Steams with plums, ginger and soy from the Complete Kitchen cookbook (page 144), the pork was on offer in Sainsbury’s so it’s a cheap meal, can’t remember the last time I had pork.
Let’s be honest when it’s this cold you don’t want to do much else other than snuggle up in front of the tv, so at least if it’s with a nice warm bowl of low ProPointed soup, you won’t be hindering your weight loss mission too much.
We’ve had some great weight losses this week, not everyone likes to share their glory via facebook or in the meetings so congrats to those ladies/gents who are losing without being loud and proud, you’re still brilliant.  Sometimes we don’t get the results at the scales we expect and it’s disappointing I know but I also can’t help unless a member is 100% honest with both me and themselves, and I definitely can’t help if they walk away.  Weight loss isn’t easy and we don’t always get the results we want, that can be for a number of reasons and it’s taking the time to work out what they are which makes you successful in the end.
212lb lost yesterday – that proves it works, not forgetting the numerous gold members that are maintaining their weight each week but coming to get weighed.
So whatever you’re eating today, enjoy it, ProPoint it and track it.
Have a fab day. xx
