Found my inner Delia


Yes Delilah is officially back in the kitchen. I love it when I enjoy cooking and eating the end results. Today I've made Pan Fried Chicken, turkey rashers, peas & mash for 6½pts per portion

2 x medium 165g chicken breasts (5pts)
3 slices turkey rashers chopped (1pt)
low fat cooking spray
4 chopped spring onions
1 diced carrot
150ml stock
100g frozen peas (1pt)
1 little gem lettuce

Boil & mash 300g potatoes (3pts) or I used Smash cheddar and onion flavour, 1½pts per portion, to serve with the following;

Season chicken breasts, spray a non stick frying pan with spray and brown the chicken for 1 minute. Turn chicken and add turkey rashers to the pan – fry for 1½ minutes. Stir in carrot and spring onions & cook for 30 seconds until bright green, then pour in the chicken stock and bring to a simmer. Cover then pan, reduce heat & simmer for 10 minutes.Stir in frozen peas and lettuce, re-cover the pan and cook for 3-4 mins until peas are tender & lettuce has wilted.

It was absolutely delicious and very filling, the chicken is poached more or less so much juicier than normal.

I forgot to have my breakfast this morning - how did I of all people forget to eat, so I ended up having an Alpen bar from Jenny - yak, rather have a Weight Watchers new oaty bar any day of the week, or one of the all day breakfast bars.
